The Process Behind Premium Coffee

We all have our morning routines that if altered could effect our entire day. Most of the time, a cup of coffee is essential in these routines. Ever think how that coffee was actually created? Well, there is a pretty vigorous process behind that morning delight. Reggie's Roast Jamaican Blue Mountain Coffee knows of this process all too well since they have been producing gourmet coffee for over a decade. It's all part of a four step procedure: harvesting, processing, roasting, and finally brewing. Processing is a crucial part of the process that can be done in two very different ways, either the dry process or the wet process. Reggie's Roast Jamaican Coffee uses the wet process to produce the best coffee beans. However, other companies prefer the dry process. What's the difference?


We'll start with the dry process also known as the "unwashed processs". This is the oldest method of processing coffee and some premium coffee companies rather keep this tradition. For the most part, this process is used in regions where water and technology is scarce. After the cherries are harvested, they are then cleaned and left to sit in the sun to dry. It can take anywhere from about ten to fifteen days for the cherries to completely dry. Raking is necessary while they are drying. This stops mildew from growing on the cherries. Coffees that went through a dry process usually taste a little tardy and have an unevenness about them. Typically, Jamaica Blue Mountain coffee is not dry processed.


The wet process makes for a completely different taste when compared to the dry process. Also known as the "washed process", the wet process is used to help create Reggie's Roast Jamaican Blue Mountain Coffee. To begin, the wet process cherries are dispersed in water. This allows the unripe cherries to float to the top and the ripe cherries to sink near the bottom. Once all the unripe cherries are removed then the skin of the cherry is removed by machinery. This process is called aquapulping. Finally, the cherries are sent off to the coffee roasters where they can be made into premium coffee beans. The wet process has been known to give the coffee an acidity and floral taste. Currently, this is the most popular way to process coffee.


Reggie's Roast Jamaican Blue Mountain coffee has been using the wet process since the early 2000's and has shown great success. This process is a huge reason why Reggie is producing the best coffee beans around. The wet process is and will continue to be the most common way for gourmet coffee companies to produce coffee. Next time you have a cup of coffee in the morning, I bet you'll be thinking of how it was processed.
